Palate: Ripe plum and rich mocha flavours with a lingering aftertaste

ABOUT THE HARVEST
The grapes were harvested middle of February at 25° – 26° Balling.

IN THE CELLAR
Cold soak for 48h before fermentation. Fermentation period 7 – 9 days at 24° – 27° C
Malolactic fermentation on medium toast French oak. Matured further for 7 – 8months before bottling.
